Description:
Kokam kadi is a tangy drink made using sundried kokam.
- 10 peices of dried kokam or 2tbsp of kokam syrup,
- 250 ml of coconut milk or half cup of thick beaten curd.
- 500 ml of water,
- 1 inch ginger,
- 4 cloves garlic,
- 2 green chillies
- Salt to taste
- half a teaspoon of sugar (to reduce the sourness of kokam),
- some finely chopped green coriander leaves( for garnishing)
Method
- Step 1 : Boil dried kokam for 2 min .This will extract the sourness and unique dark pink color from it. You can skip this step if you have kokam syrup.
- Step 2 : Grind together ginger, garlic and green chillies .
- Step 3: In bowl mix together kokam extract ,ground ginger-garlic paste, salt to taste, sugar, coconut milk and water. Mix well. Garnish with finely chopped coriander leaves.
Serve chilled. This can be used as a digestive drink after a heavy lunch or dinner
