Vaali Ambat



Description:
Vaali(in konkani) or Mangalore Spinach is a green leafy vegetable known for its medicinal values . Its leaves are thick unlike spinach/Palak.This climber can be grown right in your kitchen garden . Just plant few twigs of Vaali in soil and after 2 weeks you can make curry like his using its leaves. So lets check the recipe of Vaali Ambat.




Ingredients:
3 cups of chopped Vaali or Malabar spinach,
1 cup of scraped coconut,
2 finely chopped onion,
1 cup boiled toordal,
3 fried Byadgi redchillies,
1 pinch of hing,
1 inch tamarind,
2 tablespoon of cooking oil,
Salt to taste.
Method:
  • Pressure cook Vaali,boiled toordal and salt in a pressure cooker (3 whistles).
  • Meanwhile in a grinder grind together coconut,redchillies,tamarind and hing. Make a very fine paste.
  • Now in a round bottom vessel(topu in konkani) mix the pressure cooked Vaali(step1) and ground coconut paste(step 2).Bring a boil.Close the heat.
  • For seasoning: In a seasoning pan add 2 tablespoon of cooking oil, add the chopped onions . Fry until they get a golden brown color.Pour this over Vaali Ambat.
Serve hot with rice or chapathi.
