Beansa Upkari

All konkanis know how to prepare a simple upkari of any vegetable, but lets think how we can make it differently so that there is not only an element of innovativeness but is also great on our taste buds!!. Let us check Beansa Upkari recipe.

1 kg French Beans(cut longitudinally into 2 inch pieces),
2 potatoes peeled and cut into cubes,
half teaspoon turmeric powder,
1 teaspoon mustard seeds,
half teaspoon Zeera,
1 green chilli(or more if you want it spicy),
1 slit byadgi red chilli,
2 teaspoon of curd,
2 tablespoon scraped coconut,
4-5 curry leaves,
3 teaspoon oil,
Salt to taste.
  • Heat oil in aroud bottom pan(Kayli), add mustard seeds,curry leaves,slit byadgi red chilli . Once the mustard seeds start spluttering , add cut beans and potatoes add turmeric powder and Salt to taste.Close the pan with lid . Cook for 10 minutes.(beans and potatoes should cook)
  • Meanwhile in a Mixer add coconut ,zeera , green chilli and curd.Grind it to make a coarse mixture.
  • Add this to the cooked vegetables in the pan . Saute for 5 more min.Close the heat.
Serve hot with rice and tomato saaru or Chapathi.
